A lot of stellar suggestions so far. Some of which are completely new to me. Noticed that Reaktor was mentioned a lot. Still getting to know Reaktor even after a few years of owning it - time well spent though!

Audiomodern has an elegant approach towards these sorts of "out there" sounds (again, I appreciate when weird sound tools have an inspiring interface), I like their Glitchee and just saw that they released: http://audiomodern.com/shop/instruments/sync/

Largely leaving a comment so I get thread updates, but I don't think DtBlkFX has been mentioned. Superb, free, cross-platform spectral processor which does a lot of things that SpectrumWorx (which I also love) doesn't. Quickly gets into subtle yet WTF territory when you get into the masking stuff, while extremely large window sizes in conjunction with the 'force to pitch' type modules are fun to play with on monophonic material. Wish it had a stereo sidechain mode though.

Most of the truly out-there stuff I'm seeing now is for iOS. Stuff like TC-11, Beatsurfing, and Samplr. While I'm hardly enamoured with Apple, I'd say it's worth taking the hit for an iPad if unconventional instruments and controllers are your bag. Innovation is happening at a rate of knots in the mobile space, while unconventional instruments in the desktop DAW space seem stuck in a bit of an 'easily recreate the tropes of late-90s IDM' rut.

while the idea itself is not unusual, modular environments often give rise to combinations and chains that might not otherwise be easily created ...and often, results from mad routings ARE unconventional!
maybe someday Ableton will provide as nice a sandbox as Image-Line has with Minihost Modular!... it would even be mighty nice if a new vst hosting module were added to the OSCiLLOT

+1 for GRM Tools. Also, in the same domain are Michael Norris' free suite (mac AU only)
Here are ten more Un-plugs:
1. Argotlunar by Michael Ourednik, a free realtime granular instrument that is quite musical!
2. Crystal by Glenn Olander/greenoak, a classic synth-- one of the all-time Most Unconventional, with many presets & free
3. Hadron by Partikkel Audio, a morphing granular (wild!)
4. Hypercyclic by mucoder, a crazy midi arp & mangler,free
5. Mangle by tom Maisey/SoundGuru, a great new granular in beta & updated last week
6. QuikQuak's UpStereo, extreme stereo and free; but also check out their other Un-plugs like a crowd simulation plugin (!)
7. Anarchy Effects' Spectral autopan, and everything else they do (length separator?)
8. Spline EQ by Photosounder, a free/pay Extreme EQ ( and dont forget Photosounder itself that is very Un)
9. Izotope Iris, yes its well-known but few use it to full advantage, especially in combination with RX4. Truly Un!
10. AAS' seven physical modeling synths, when I am tired of saws and sines and want to virtually hit things in truly endless ways that all sound beautiful (in its own way...).
