I am trying to edit the amount of the bend range up and down on my Evolution Flatwound Bass. I have gotten into to the Setup mode but nothing seems to happen when I click anywhere. Just not available. And while I'm here, ca I add a B string to the bass? (I'm pretty sure I've seen it done)

There are bend range up/down settings in the SETUP section, but you'll need to scroll down to find them. To change the setting, click and drag the value horizontally.
Evolution Flatwound Bass is a 4-string bass, but if you need to get a low B, there's an alternate tuning that can be selected from the SETUP section that will tune the low E string down to a low B to give you that extra low range.
