We produce sampled instruments with the aim of recreating the experience of playing the real instrument. In the sampling studio, it's that moment we strike the piano key that best tells the story of the instrument we're trying to capture. Between the moment the note is recorded to the instant it's delivered to you, we try to stay out of the way as much as possible.
My Mom always used to tell me that the good stuff in an apple was in the peel. The same is true for sound - those little details around the edges we are sometimes tempted to "clean up" are the details that really bring us closer to what the instrument is.
