Max for live has lots of different step sequencers.
But Abelton Live's Piano roll is the best step sequencer you can get.
Program steps at any size, time signature, velocity, create building blocks with different variations and use the groove feature (random) to add life and humanize the sequences.

I use Five12 Numerology. Routing MIDI can be a little tricky. It's not clear on their page, but the SE is enough for most people.
You could also try Thesys.

You should be able to use UltraBeat, but Apple isn't implementing MIDI out on their instruments or AUs. You could leave feedback with apple saying something along the lines of "the lack of direct MIDI routing is causing timing issues, latency and hurting my projects" Hopefully, if enough people do it'll get fixed. http://www.apple.com/feedback/logicpro.html
