I meant, how do I delete the entire set of custom settings. Here's a screenshot of my Settings>Shortcuts page.
I don't want the mappings dropdown menu to contain "default keyboard mappings (my version)" any more

If you are on Windows, delete the file: "Default keyboard mappings (My version).bwkeymap"

in this folder:

C:\Users\YourUsername\AppData\Local\Bitwig Studio\keyboard-shortcuts\
