Hello,

in order to build my live setup I'm looking for a medium-low priced 61 midi keyboard to only play organ (and synths sometimes). I don't need anything super featured as the native instrument. I only care for 8 faders to play the organ properly.

Look for a used Roland A800Pro.
It has fast, unweighted synth action keys.

Actually, you need 9 faders to emulate the drawbars, not 8.

Or the Edirol PCR800, which is the earlier Roland A800. 9 faders + 9 pots so you can do 2 manuals if you want a split.

Any inexpensive 61-key MIDI controller and a decent organ vst will do it. Most feature 8 controllers that can be assigned, if you're not opposed to using dials instead of sliders as drawbars.
Spotify, Apple Music, YouTube, and even Deezer, whatever the hell Deezer is.
